Chicken liver and foie gras ganache, black fig chutney, pickled shimeji mushrooms and pistachio brioche

Grilled goats cheese crottin, candied beetroots, balsamic pearls and pumpernickel

Ashdale beef short rib, red wine braised shallots, garlic pomme puree, Yorkshire blue cheese and a cabernet franc jus

Fillet of free range pork, colcannon potatoes, pancetta and sautéed girolles

Slow poached Cornish Plaice, crispy chervil and fish wontons, pickled fennel and black winter truffle

Curried sea bream, crispy Oxsprings ham, tangy mango chutney and a coriander rosti

Pumpkin and rosemary gnocchi, toasted pumpkin seeds, potato straws and pickled baby turnips
